From a quick Google, it looks like "g_corpsecount" might be the server-side command you're after.

Assuming it works (I'm not currently able to try it), it should limit the number of corpses which appear in the server. So setting it to 0 should in principle stop them.

I seem to recall mp_codjumper_training starting with jump sizes which you can do by running straight forward and jumping, i.e. which doesn't require a strafe jump. So I'm not sure if it's possible to find an 'easier' map to train on. I can't think of any other maps which may be relevant, but my reco...
